The story
The same old white vines, treated like a red. The grapes are destemmed by hand into clay amphora buried to the shoulder, and left on their skins for fourteen days. The colour comes slowly, then all at once. We seal the jars with beeswax and wait until spring. Serve it a little warmer than you think.
